Horse box pizza offering good food on the hoof

Lynda and Richard Davis KEEP your eyes peeled for an unusual horse box visiting a field near you soon.

Inside the horse box is a wood fired pizza oven that creates tasty meals in just 90 seconds, thanks to the 400 degree oven.

Pizza on the Hoof is the brainchild of Weymouth couple Lynda and Richard Davis, and sprang from a conversation with a friend of theirs one night in Italy.

They were discussing pizzas in the UK and the idea was born to put a wood-fired oven in a horse box. The couple used to live in southern Italy and still have an olive grove there. They now make their own flavoured oils that they use on their pizzas.

Since the business started just over a year ago, the couple have had great success at travelling round to markets, fairs, camp sites, art and food festivals and at village events. They recently won the Best Overall Product and Most Innovative Watercress Product with their watercress and toasted cashew pesto at the Alresford Watercress Festival in Hampshire.

This was just one of the highlights at the annual Watercress Festival on Sunday 19 May when 12,000 foodies took advantage of the unexpected sunshine to descend on Alresford in Hampshire, the UK’s ‘capital of watercress’ to celebrate National Watercress Week and the start of the UK season

The winner of the Most Innovative Watercress Product, which also won the title of the Best Overall Product, was ‘Watercress and Toasted Cashew Pesto’ made by Artisan pop up Pizza restaurant, ‘Pizza on the Hoof’, which is currently based in the South West but which will return home to Italy in the Autumn. Diana and her fellow judges, Samantha Lyster, deputy editor of Fresh Produce Journal, and Charles Barter, of the Watercress Alliance, felt this product deserved to win as it had beautiful colour with a fresh, watercress flavour and a good balance of watercress and cheese.
